My favorite food is called shakshuka. I made it for the first time when I was seventeen, and I’ve loved it ever since! Shakshuka is a food in which eggs are poached in a spicy tomato sauce. Shakshuka is popular in the Middle East and the Mediterranean. Now, I love tomatoes, and I love eggs, but the real reason I love shakshuka so much is because I always get to share it with people. Seriously, I don’t think I’ve ever eaten it alone. And as a bonus, anyone I’ve ever made it for loved it. It’s become my main comfort food for these reasons and, of course, because it’s delicious!

I’ve been a lover of food as far back as I can remember. For me, my favorite foods evoke a memory, time, or person and most of the time it involves my nana. Nana made the best meatballs I’ve ever eaten and Sundays were always pasta dinner at nana and papa’s house. My favorite dish that nana made was such a simple combination of three major ingredients that she always had on hand – potatoes, green beans, and sauce. I don’t have to think hard to be transported back to her kitchen and remember the smell of that dish simmering on the stove. We would eat it with fresh Italian bread and she almost always served a simple side salad of lettuce, tomatoes, and cucumbers dressed in olive oil, vinegar, salt and pepper. Recipes connected to stories, memories, and ancestors have always been my most favorite.
